Not sure how easy it is to add graphics cards to mac's Leggo's the expert, i imagine they come with all you would need

Most new PC graphics cards I have seen have twin output.

'Pro' model Macs come with dual screen output for the desktop and portable models.
Not sure about the iMacs, probably not as they are specifically designed to be completely contained within one unit (the computer is in the screen!).

what about macbook... i ask because i ve seen one yesterday and theres not much place for stuff. i wonder. somebody told me i should get one of those for music productions.

Mac or PC, one thing to consider for music is outputs.
How many outputs can you send out to the mixer. I have an M-Audio Delta card for my PC - four full size jack inputs and outputs to help separate instruments going to the hardware mixer. Four isn't really enough though, they do one with 10 in and 10 out - that would be useful!
I don't know if they work with Macs the Delta cards - they probably do - if not, I'm sure there are similar for Macs - Macs are popular with the music world.

A MacBook Pro would be the thing to get. Two screen capability and line out / line in ports. If you had the 17 you probably would hardly bother with two screens and it easily replaces a desktop. I use a 17 inch MacBook Pro and find it easily portable with the right bag. I lug it around on my back on my cycle daily. The portability of a laptop valuable.
Breakout boxes of various kinds can be got for the Mac, some use the USB. I've seen midi controllers etc. M-Audio do a lot of stuff for Macs.
