I wanted to call it "the Squirrel's Nuts" because it is in the middle of lovely parkland. But the council, (city corporation) who own the building wouldn't let me. They also tried to cancel my lease when they found out I planned a total vegetarian menu. Sheer Babylon business!

But I flatly refused to desert my principles and stood my ground. With Jah's help I have prevailed and we're back on track!

Praise God or his guidance.

good luck with it all. it is a ton of work. at least you get to call your own shots and get to listen to the music you like all day/night. ive cooked for many years and helped open several restaurants (menu development, kitchen stocking, cooking, etc) and unless you own your own gig it can be very trying.

howsabout calling it ital vitals?

if i were in the uk id come eat there all the time.

im in the process of writing my own cookbook, its been taking me years since i am lazy about it and dont really like exact measurements, sort of like england's naked chef's approach to measuring.
if i get it done soon (i have a pulbisher who said that they'll take it on) i will send you a copy for your kitchen.

I did a few years as a veggie chef. VERY hard work.

I've also spent the last 15 years 'writing' a cookbook. I hope that my new project will give me some way of finishing it. And I intend to 'tie' the book to the cafe's brand.

Because the cafe is in the parlour of an old Victorian lodge house, we've decided to call it just that 'the parlour'.

If Jah wants this to work, it'll work, if he doesn't, nothing I do will make it work. He's my boss.

simplified leaf bhang

this bhang is made with the leftover clippings and sunleaves. the amount of leaf used depends on strain strength and the desired effects. i have used some leaf with scragglely bottom flowers before and was taken for a loop each time, be aware and approach with caution when you use any flowers in the mix. as a matter of fact, be mindful of your recipe overall, sometimes this drink will hit hard and heavy...

1 gallon milk
2 big scoops (with both hands) of dried leaf
flavorings: honey, cocoa, coconut milk, nutmeg, agave,
berries, mango...etc...
mesh strainer

grind leaf up real good.
pour milk into large soup pot. add 1/2 your stash. bring to low boil, then turn down to lowest heat. simmer for 20 minutes, stirring here and there, while covered. make sure it only simmers and not boils.
scoop out the leaf and strain it well by using a spoon to press out all liquid from the strainer.
repeat with the rest of leaf.
let it all cool, then chill it if you want.
add cocoa, honey and spices to flavor it tasty.
if you want- instead, add mango or other fruit, then puree it in a blender with some ice.

serve it up. usually, this will yeild about just over a half gallon. should be enough for 4 glasses, to give 4 people a decent buzz. for 2 people it would be a big high. of course, again, this depends on the strength.

yes i do know they serve it in the temples, but they usually use hashish. that would be something!
one time that my buddy and i cooked up the recipe with some highest quality buds and i swear i was having visions of a blue god with lots of arms...that night i think i discovered where they came up with the descriptions of some of the deities in india...no kidding, was quite the out of body trip. since then, whenever i make bhang i tone it down a lot (hence using leaf/or only a very small amount of flowers- i thnink we used about a 1/4 oz for the two of us that night, maybe a touch more). both of us more or less blacked out 16 hours, too strong. we worked together and couldn't show up for work the next day...two days later we had some explaining to do to our boss...at least he was cool with it ("next time share it with me").
