The version to The Hurricanes "You Can Run" - sounds like they hired a gorilla to play the drums.
Black Ark is elementary!
Two Plus One (Twin Roots) "Jah Say Love" (Congo 7") - killer tune!
Kwame Heshimu "Beast of Burden" has a very cool percussion mix.
Bim Sherman "World Go Round" (Scorpio 7"). Maybe not what you're looking for, but it's a nice dub version. Lots of rimshots.

Skatalites and King Tubby "Fugitive Dub" and "Roots Dub" come to mind. Both from the Legendary Skatalites Meet King Tubby and both are excellent.

No mention of Bongo Herman yet. He has done many drum versions over classic riddims.
And there are many versions of Roots Radics tunes with prominent drumming from Skully Simms.
