Well, if you can plug in the mixed to your computer and record what you're playing on the CD-players then it's just a matter of recording.
You can always use the free program Audacity for the recording and then use razor lame for encoding it to mp3.

Re: How to make a podcast?
I'm happy to help you get started, as I assembled a small DJ/broadcast-type studio and started podcasting earlier this year.
I found that recording to my computer was problematic. I got some extra noise when I connected the computer's soundcard to the outputs of my DJ mixer via 1/8th to RCA cable. Even after plugging in a USB audio device, I got a similar noise. I think it was ground loop hum. Then again, I have an old computer. So ultimately, I decided to forget computer recording. Instead, I record to a Sony Hi-MD portable. You might want to record to a flash recorder. They're getting less expensive and more powerful all the time. Take for example, the Zoom H2.
If this is helpful to you, feel free to engage me in more discussion. I love talking about podcasting hardware.
